50% of the people like it 100% of the time!

I am always looking for a new side dish recipe.

My husband thinks two potato dishes are all you need to round out a main course of meat.  Peter thinks meat alone is just fine.  Sarah is a little more adventurous but is typically just fine with potatoes and bread.

I continue the quest, usually in vain, to find a few vegetable dishes we can all eat and enjoy.

Last week, I tried a sauteed cabagge receipe.  And believe it or not - they all hated it!  HA!

I liked it.  My mom and brother liked it.  And I think my sister-in-law liked it.

Since 50% of us thought it was good, I figured I would share it here with all of you.




Sauteed Cabbage with Bacon, Onion and Garlic

Ingredients 

  • 6 slices bacon, chopped
  • 1 large onion, diced 
  • 2 cloves garlic, minced 
  • 1 large head cabbage, cored and sliced 
  • 1 teaspoon salt, or to taste 
  • 1 teaspoon ground black pepper 
  • 1 teaspoon onion powder 

Directions

Place the bacon in a large stockpot and cook over medium-high heat until crispy, about 10 minutes. Add the onion and garlic; cook and stir until the onion caramelizes; about 10 minutes. Immediately stir in the cabbage and continue to cook and stir another 10 minutes. Season with salt, pepper and onion powder.
Serve and enjoy!

Really, all I can do is shake my head.

Sarah is even more obsessed than ever with "What Should I Be When I Grow Up"? 

Apparently all of her class has been a Star Student of the Week.  If you will recall (and please tell me that everything you read here is seared into your mind - otherwise, why am I doing this?) during the first round of Star Student of the Week, each student had to fill a "Me Bag" with 10 items that were important to them and they had to tell everyone in the class about the items. (One of Sarah's items was a book jacket to represent her book jacket collection. She's, um, different, that one.)

Anywho, this round of Star Student of the Week has the kids filling out a questionarre that will be posted in the hallway with their picture on the 3rd grade bulletin board for all the school to read. 

And one of the questions is "When I grow up I want to be a ____________."

When Sarah asked me for the millionth time what she should be, I replied, "I thought you were going to be a lawyer."

"I can't put that. Someone else has already put that on their form."

"So," I replied, "if that's what you want to be then you should put that on the form."

"Mom, that is so boring."

Well, duh.

So we played the oh-so-fun game of "What should I Be When I Grow Up?".  This exciting game includes Sarah asking me the question, me responding with an answer and her responding with "No.  What else?"

This game can literally go on for days.

After I exhausted all of the normal professions: doctor, teacher, actress, librarian, newscaster, singer, nun, stay-at-home-mom (that one got a big thumbs down, by the way), chef , I said, "How about a chef?"  Nope.  "How about a baker?" Nope.  "How about an interior decorator?"

"That's it!" she exclaimed.  "I'll do that!"

"Great! Interior decorator!  It's settled."  Whew.  Glad to be done with that game.

"Now what exactly does an interor decorator do?" 

ARRRRGGGGHHHH!!!!!  Are you kidding me?

After I told her, she said that's not what she wanted to be.  She wanted to be the person that decorates cakes.  (Please note, above I said baker then interior decorator.  Somehow she got it into her head that an interior decorator is a person who decorates cakes.)

Then she asked me what the name of a person who decorates cakes is.

"Um, a cake decorator."

"Nope.  That's not it.  What's the real name."

"A pastry chef."

"No that's not it either."

"A baker?"

"Mom!  Will you just tell me the name of the person that decorates cakes??!!!"

She would not believe that it was just a cake decorator.  She made me consult Mr. Google and was actually mad that I couldn't find any names for it other than cake decorator, pastry chef or baker.

My brother came to visit later that night and she asked him what she should be.

"A land ship captain," was his immediate response.  He's a truck driver and will occassionally refer to himself as a land ship captain.

"Oooohhh!  I like the sound of that.  What do they do?" she asked.

She was less thrilled when she found out the exciting title of "land ship captain" merely refered to truck driver.

The she suggested a regular ship's captain.  I asked whether she wanted to be a sail boat captain or a cruise ship captain.

"Cruise ship captain!" was her immediate response.  "And I've already got the outfit!"

Moons and apes and cameras. Oh my!

It was bright and clear on Sunday evening and the moon was almost full.

We still had our rickety old telescope set up from the previous week when we tried to get a glimpse of the asteroid that was coming close to the earth.  Unfortunately it was cloudy here that night so we couldn't see anything.  Not sure with the asteroid's distance from the earth and the general cheapness of our telescope we could have seen anything anyway, but we were going to try at least.  Oh well, I'm sure another asteroid will zoom by at some point...

We took the telescope outside and the kids got to see the moon in all it's glory.





As I was trying to capture the moon and the kids looking at it through the telescope, Dan was scratching his side.

I told him he looked like an ape and ask if could he please stop so I could get some better pictures.

ahem...

I'm still struggling to make adjustments to the settings on my camera to take better pictures but I am at least trying.  I'm going to keep working at it until I get it right!

As usual, I was a day late and a dollar short.  Dan's sister, Cathy, came to visit for the weekend and I got approximately zero pictures of her with the kids.

She played Trouble with them, went to their basketball games, made lava lamps with them, and took them out for frozen yogurt and I don't even have ONE picture of her with them. 

Not one. Sorry Cathy.

Last night, we tried to revive the lava lamps with fresh Alka Seltzer and here's a few pictures of that.  You can't see how cool these really turned out, but you get the idea.

WIWS - The Chevron Stripe Edition


It's Sunday - that's right - What I Wore Sunday!

I decided to hop on the Chevron stripe bandwagon before it became yesterday's trend.  I'm pretty sure I waited a little too long because it seems like the world has moved on to floral and printed pants as the latest and greatest.  Pretty sure I won't be hopping on THAT bandwagon.

Because, y'all, the 5 pounds I gained after Christmas and still can not get rid of has ended up in my thighs (and in my cheeks, both sets of cheeks, actually).  And a floral or any print on my pants is only going to magnify that problem.

Anyway, where was I?  Oh yes.  The Chevron stripe.

I like this shirt because it's loose and flowy and I don't have to stuck in my stomach when I'm wearing it.

The problem?

I felt like Rhoda the whole time I was wearing it.  Seriously, all I need is a head wrap and a spastic friend named Mary and I'm good to go.

7 Quick Takes Friday

It's been a while since I've done some quick takes so let's see if I've got enough to make it all the way to big number seven.

I was driving the kids to school the other morning and the people on the radio were discussing some finding that stated that you were very likely to get your propensity to say "yes" or "no" from your parents.

Of course, they were speaking in terms of saying "yes" or "no" to projects,church work, helping out at school, etc. - you know, all the things that can fill up your day and make you crazy if you aren't careful.

Peter heard this and exclaimed from the backseat, "Well, if that's the case, then I'm going to saying 'no' a lot thanks to you Mom!" Oh, funny boy.

But in my defense, if I said "yes" all the time, we would have several dogs, more toys than Toys R Us and spur of the moment sleepovers every night.

On my run yesterday, I noticed one of the houses had a ladder set up next to the house.  I thought that was strange since they had gutter guards and most likely weren't cleaning leaves.

About 15 minutes later an Animal Control Experts truck pulled into the neighborhoodAnd just as I suspected, he pulled up that house.

My nosiness is killing me and I thought about emailing another neighbor to find out what they found!  (I don't know the neighbor that needed the experts to remove something from somewhere in their home but I do know their next door neighbor.  I decided that would be the ultimate in nosiness.  So I'll just wait until I bump into the other neighbor at some point.  That would still be pretty nosy but it feels less nosy.  

Hmmmm....maybe I should have given up nosiness for Lent!

My sister-in-law is coming from D.C. this weekend to see the kids play basketball.  The kids are always thrilled when Aunt Cathy comes and this time is no different.

She is bringing the makings of a lava lamp.  The kids have been on a science kick lately thanks to Peter's new found love of chemistry.  I've done a couple of small experiments with them but the thought of a homemade lava lamp is really exciting them.

My husband has been in Ireland all week and it has reminded me that two years ago this time, we were planning for our trip over there together.  I accompanied him on a business trip but we managed to squeeze in lots of fun things.  You can read about our trip here, here, here, here, here, here,here, and here.

I know, I know.  Looking at blog posts about other people's vacations is the modern day equivilant of watching a slide show.  But if nothing else, click over to see how much my hair has grown in two years (and confirm that my current shade is a little more natural looking) and check out my cute yellow Target trench coat!

I love coffee.  Most people that know me, know that.  And typically I like my coffee to taste like, well, coffee.  I've never been a fan of flavored coffees.  But occassionally, I like to get a peppermint mocha from Sheetz.  In January, I found myself looking for excuses to go to Sheetz to get one...typically in the afternoon on the way to pick the kids up from school.  But while tasty, they are also a little pricey.  So I found some peppermint mocha creamer and that seemed to satisfy my cravings.

But at a Moms's group meeting on Tuesday, my friend Heather, was discussing International Delight's Salted Caramel Creamer.  They were talking about how delicious it was. Heather said if I liked the combo of salty and sweet, I would like this.  And, I do like the combo of salty and sweet, so I picked up a bottle at the grocery store. 

And y'all!  YUM!  It is so good!  It has such a nice creamy, smooth caramel flavor. It's not salty so don't worry about that but I would also say that it isn't really sweet either.  Give it a shot, I think you'll be delighted...Internationally delighted!  Ha! (And no, no one is paying me to say that. Just wanted to share my latest treat with you guys!)

I have a hot date tonight!  With this guy...

 
His school is having a Mother/Son Bowling Night.  We get to share two hours of bowling, a large pizza, and a pitcher of soda.

I think he's most excited about the pitcher of soda.  I'm most excited about getting to spend a little time with my boy - the one who's growing up way, way to fast and will be in college in less than 8 years. 

And if those 8 years go by as fast as the last 10, he'll be gone in the blink of a teary eye.

Practice and a chance.

Peter is well on his way to his career as a professional basketball player.

He scored his first basket on Saturday!

In Upward, their goal is to make sure that every player scores at least one basket each season.  On Peter's team, as with each team, there are a couple of older boys who bring the ball down the court each time. (Forwards, I think they are called.  Not going to Google it because I'm too lazy.)

And these two older boys are usually the ones that score the most points. 

Peter's coach told these boys to make sure they passed the ball off to Peter when he got under the basket.  And he told Peter they were going to pass the ball off to Peter so he needed to be ready.

Peter has been passed the ball before but he would always immediately pass it back off to another player.  Fear?  Nerves?  Not sure what but this time when they passed him the ball, he took a shot and missed.

The next time down the court, they passed him the ball again.  And he took the shot...

...and he made it!
He gets the pass!

He shoots! (And I don't have a picture of it going into the basket because I was too busy cheering!)

I was so very happy for him.  Because for the rest of the game, he was much more aggressive, and much more confidant!

I will be interested to see if he remains that way for the last two games of the season.

On Saturday afternoon, Sarah and I, along with Jennifer and Cheyanne, worked the Brownie cookie booth.

We told the girls to stand by the door and ask people when they walked up if they wanted to buy Girl Scout cookies.  The girls, (especially Sarah) were timid at first.  They didn't want to do it.  They were shy.  They were embarrassed.

But after doing it a few times, they were confidant, more self-assured. And by the end of our two hour shift they were running up to people before they could even get to the door.

They excitedly marked the cookie tally sheet, bagged up cookies, offered samples of the newest cookie - Mango Creams, said "thank yous".  They were great little sales ladies.

I guess with a little practice and a little experience, we can do anything!

WIWS - Edition: Copycat!

One of the cool things about What I Wore Sunday is that you can check out a lot of really cool outfits and get inspired.

Or, you can do like me, and find a really cool outfit and just totally copy it. Which is what I did this week.

Last week, Grace from Camp Patton had on the cutest outfit. (Correction, Grace always has on a cute outfit.)

I had all of the elements in her outfit so I decided to give it a go this week.
 
 She wore a blue puffy vest but I only have a brown one so that's what I used.

And her shirt was a little more denim-y that mine, but once again, I used what I had.

Also, she at 6 weeks postpartum has a much better figure than I do at 8 years postpartum, but once again, I used what I had.

Simple is good...sometimes better.

On Valentine's morning, we did our normal exchange - cards between me and Dan, goodies from us to the kids.

After getting dressed for school, Peter ran to get paper and colored pencils and made one of these for me, and one for Dan.


And Sarah had placed this at Dan's spot at the table before he came down for breakfast.


So sweet, I thought.  But I have to admit  I was a little wistful that she had not made one for me.  I chalked it up to daddy's girl, got the kids out the door to school and went on my run.

After my run, I went to my bathroom to shower and saw this on the counter:

Wonder why Sarah is making designs out of Reese's pieces?  I wondered as I hopped into the shower.

After my shower, I opened my drawer (the one the arrow had been pointing to!) and found this.


She made one for me after all!

Lent. And what I'm giving up.



Ann Voskamp, if you don't already familiar with her, is the author of 1000 Gifts.

She writes a beautiful blog and just last week as I was perusing her archives, I stumbled across this post she wrote in January where she encouraged  her readers to memorize Romans chapters 1, 8, and 12.  (Last year she and her readers memorized the entire Sermon on the Mount.)

Memorize 3 entire chapters from the Bible?

I was intrigued.

One of my goals for 2013 was to memorize 12 Bible verses.  And quite honestly, I was already having trouble with that. 

What made me think I could memorize 3 entire chapters in a year? Even at just 2 verses a week, the old noggin isn't what it used to be.

Then it hit me.  I had been thinking about, praying about, wondering about, what sacrifice to make during Lent.

I'll do it, I thought!  I'll do it! This will be my Lenten sacrifice.

They say it takes 21 days of repeating a behavior or activity to form a new habit so I decided that the 40 days of Lent would be a good starting point for this year long endeavor.

So I set out to make my little booklet.

And I began working on memorizing the first two verses.

I have struggled the last six days to get the first two verses to stick.  Struggled.

I've recited them while brushing my teeth, while waiting in traffic, while washing dishes.

I've recited them at times I would have normally be reading blogs, or playing Ruzzle, or checking Facebook.

And finally, after 6 days, I think I have the first two verses memorized.  Finally.  I think.

Tomorrow, I will recite them to Dan and he will sign that he heard them and then I will move on to the next two versus.

Hopefully after the 40 days Lent, I will be in the habit of memorizing and reciting these versus and I will be well on my way to knowing by heart Romans chapters 1, 8, 12 by next February.

If the first two versus are any indicator, it is going to be a long, slightly painful, but ultimately fruitful Lent.

My kids, at ages 10 and 8 1/2, are obsessed with what they want to be when they grow up.

Here's a list of just a few of the many professions they have proclaimed as "What I Want To Be When I Grow Up" just over the last couple of months.

Lawyer has been on Sarah's list several times over the past couple of months and  is where she has landed once again...today anyway.  She only wants to do this because her BFF wants to do this. In my humble and motherly opinion, Sarah is too dramatic and creative and artsy and not bookish enough to be a lawyer.  But one other thing I know about Sarah - she's pretty determined, so if she decides she really wants to do this when she gets older, she will.

Chemist just came up on Thursday.  Someone's father (who works for a plastics and chemical company came in and did a chemistry lab for Peter's class and Peter was absolutely fascinated with it.  He loved how you could combine a couple of ingredients together to get interesting reactions  and is now requesting a chemistry set (with beakers and everything, Mom!).



And just yesterday while he was shooting baskets in the driveway, he told me he had it all figured out.  He was going to go to Duke or Carolina on a basketball scholarship and study chemistry.  That way he could be a chemist when his professional basketball career was over.

And all this from the kid who hasn't even scored one basket in a game this year. 

Don't you just love how kids dream big dreams with no limitations of what is or isn't possible? 

I think the hard part of parenthood is keeping them grounded while encouraging them to dream the big dreams.  So instead of telling him that being a pro basketball player statistically probably wouldn't happen, I told him to keep shooting baskets and to keep studying hard at school and that anything is possible.

Where was her WIWS post?

I did not post a "What I Wore Sunday" outfit yesterday and I'm sure you all are clamoring at the bit to know why.  Here's the reason:

The outfit itself was meh - nothing special.

I felt like a dumpy, old lady wearing it. And I looked like a dumpy, old lady wearing it.

The extra 5 pounds I gained in January (remember my complaints?) are really starting to effect how I feel and look in my clothes.

After I looked at the unposted WIWS pictures, I decided I needed to drop those 5 pounds immediately.

The first part of my plan is to ramp up my running.  It has been sporadic since the early fall and that's part of my problem.

What did we wake up to this morning?  RAIN!  Ugh.

I'll run when its 28 degrees.  I'll run when it's 98 degrees (okay maybe that's a bit of an extreme  but you get my drift.)

I will even keep running if I'm on a run and it starts raining.

But I will not, I repeat, I will not, start a run in the rain.

So my new "drop the five January pounds" is off to a less than stellar start.   

The second part of my plan is to eat less white food - no breads, no rice, no flour, no potatoes - you know, all the really good stuff.

This is going to be hard considering our Girl Scout cookies just arrived this weekend.  And I eat a lot of rice.  I love me some rice.

I just moved all the Girl Scout cookies to the garage where I'm hoping out of sight, out of mind will work. And I am heading to the grocery store this morning and there is zero rice on my list. There arebread and potatoes on my list - but those are for the family...I will just have to resist.

Be strong Beth, be strong.

We'll see how it all goes.

Mwomp, womp, womp, womp....

Peter had a basketball game on Tuesday night.  This was a make-up game from Winter Storm 2013 that was more like A-little-sleet-and-one-icy-road-so-no-basketball-games 2013.  I'm hoping for no more of those - let's bring on Spring.

Peter's coach is very laid back - this style works for Peter.  Peter is there more to hang out with his BFF and learn a little bit about the game while having fun.  Peter, however, also wants to win.  These two styles don't mesh well together.

The team they played on Thursday night was coached by two very spirited Vietnamese men.  And of the 8 players on the team 4 were Vietnamese - I am assuming they were the coaches kids.

Anywho - these little boys could play.  They were dribbling like pros - switching hands, passing behind their backs, zooming in and out between the kids on Peter's team.

Peter's team didn't know what to do.  The league that they are playing in is a "let's have fun and learn about Christ league" and that's the approach Peter's coach takes.  Which for Peter is all well and good - as long as they are winning.

Peter's team lost quite handily and Peter was grousing about it from the minute the final buzzer sounded.

"The refs weren't calling everything."  (And they weren't - they are more lenient in this league and purposefully don't call everything.)

"Those boys weren't dribbling right."  (They were - Peter just isn't aware that dribbling could and should be done that way because he had never seen it before.  We really need to sit down with him and watch an NBA game or at least a college game on TV.)

"The coaches were cheating."  (And technically they weren't but they were yelling things out to their boys in Vietnamese so no one else understood what they were saying.  There is no rule that covers that in the rule book so they weren't cheating but it did feel a little dishonest.)

Regardless of all of Peter's protests, his team just plain got out played.  Sorry Pete - these boys were way better than your team.

And the whole time Peter was complaining Dan was lecturing him about being a good sport.  He was telling him that no one likes to hear someone from the losing team grouse about poor calls from the ref, cheating, etc...  Even in professional sports.  Because as Dan put it, "It just confirms that you are a loser.)

Whenever we begin to lecture Peter, I think we must sound like the adults on Charlie Brown to him. 

"Mwomop womp womp mwaomp womp womp."

Because he acts as if we aren't even speaking.  My only hope is that years of these lectures and wise parental advice will kick in and maybe when he's an adult he will act like one.  For now it's just more "mwomop womp womp mwomp womp womp...."

As good as this other team was, the did have one weakness - their shoelaces.  They could not keep them tied.  There was one kid in particular that had a problem.  The game was stopped FOUR times so he could retie his shoe. Finally at this point, the refs told everyone to tie their shoes.

Peter and Colton were on the court, they looked down and their shoes and shook their heads at each other.  Their shoes were tied and did not need to be retied.  So while the rest of the teams were bending over tying their laces, Peter decided to mock the cheerleaders.


You know that cheer "Go, go, get 'em, get 'em.  And when you got 'em go ooosh ah, ooosh ah!"?

Well, that's what the cheerleaders were doing when everyone was tying shoes and I guess Peter thought it was a bad cheer.  So the mocking commenced. 

Lovely.

I guess I should lecture him about it.

 "mwop mwop womp womp womp womp...."

When will I learn?

I am currently out and about running errands (and blogging from my laptop - look at me, I'm so 2008!).

I swung into Panera bread for a quick bowl of soup between errands and as I entered the restaurant, I thought to myself you look pretty good today!

I had a MOMS club meeting earlier in the morning and Peter has a basketball game tonight so I actually put on an outfit.  This one in fact...which is still extremely casual but much dressier than what I would wear on a normal day where my only activity is driving through the car rider line at school.

So, where was I?

I was strutting through Panera thinking you look pretty good today!

And it wasn't just the fact that I had on a real outfit, today I felt thin - even though I am struggling with 5 extra pounds. (Yes, FIVE pounds I gained in January.  Not over Christmas but in January! Who gains FIVE pounds in January?  Me, that's who, apparently.)

Anyway, these cords made me feel skinny this morning because I've worn them three times and haven't washed them so they are loose.  Because if I washed them then they would be too tight thanks to the FIVE, count 'em FIVE extra pounds I gained in January...not December....January.

But like God always does with me when I'm feeling a little too proud of my bad self, he likes to bring me to a more humble position...

Ahem...

As I was sliding into a booth with my creamy tomato soup (and not the cinnamon crunch bagel I really wanted, because, did I mention the FIVE pounds I gained in January...not December?) an older woman with sensible shoes and even more sensible hair, asked "Do you ride horses?"

I chuckled and replied, "No, I don't."

She quickly replied, "Well, I saw the boots and assumed you rode horses.  I was going to ask you where you rode."

So once again, pride goeth before a fall...

Luckily this time, even though my boots would say otherwise, it's not a fall from high atop a horse!

We had a great weekend.

Basketball games and science project on Saturday.  Church and Super Bowl Party on Sunday. 

If the Patriots are in the Super Bowl we cannot go to a party or have a party.  Dan must be able to completely focus on the Patriots.  Since the Patriots didn't make it to the big game, I decided it would be a perfect time to invite the BFF and her family over.

I kept the menu simple:

Homemade Ranch Dip and potato chips
Homemade Guacamole and tortilla chips
My secret recipe Pepper Jack Pimento Cheese Toasts
Rotel Cups
Pioneer Woman's Sloppy Joes
Baked Beans (provided by my mom - leftovers from Sunday lunch)
Key Lime Pie (purchased from the supermarket)
Cream Puffs (purchased from the supermarket)
Not Yo Mama's Banana Pudding (provided by my mom - leftovers from Sunday lunch)

And last but not least, I made Cosmopolitans

And that's the only picture from the whole evening because I was too busy chatting and eating and enjoying myself to think about taking pictures. 

So in this very spot visualize 6 very cute kids roaming in and out of the kitchen helping themselves to food and drink when they weren't playing and entertaining themselves and 4 very cute (ha!) adults eating, drinking and making merry and occasionally remembering that there was a football game on in the background.

Shhhhhh....don't tell my husband this but I may secretly be hoping that the Patriots don't make it the playoffs next year either.

What I Wore Sunday - The Super Quick Edition

Super Bowl Sunday!

We've got to do this quickly because I've got a lot to do.  We are having people over this evening and there is much to be done after Mass.

The house needs to be cleaned and I've got some cooking to do.  And normally I wouldn't worry about the house cleaning too much but see the white paper dot at my feet.  There are about a hundred of those on the floor thanks to a wayward hole puncher being used during the completion of a science project. At a minimum, those need to be removed from the floor!

So without further ado, here's What I Wore Sunday:

Necklace: Kohls

I wish the necklace was laying (lying? I never use that properly and I'm in too much of a hurry to google it!) flat in this picture so you could see it better.  

These shoes are run-of-the-mill but Sarah insisted on taking a shot and insted that I include it in this post.
